I'm currently working on a bibliography "Great School Age Readalouds" (for parents, community volunteers, and teachers) -- attached is a VERY early draft (just gathering ideas at this point) but many of the titles might be quite useful for your adult day care volunteer... (also, if anyone here wants to contribute titles and/or themes to this bibliography, I'm eager to get them!) She reads a lot of simple poetry to them and has even had some success with children's magazines, but picture books are the hardest category to find something that works.
