Would Into the Wild and sequel by Sarah Beth Durst fit? More of a playing-with-the-characters than a re-telling. Straw Into Gold by Gary D. Schmidt carries the Rumplestiltskin story forward in time. Otherwise, I see all my favorites already, and some to try - great list!
